Filtering data in Excel is done to only see a portion of your data. Possibly you want to only see employees in Accounting or employees located in Europe. Filtering can be done in multiple locations, but the Data tab is a great tab to filter data from. When you turn on filters, you get drop-down arrows in your header row.
